Airmagnet WiFi Analyzer for the win. We've tried the latest triple adapter Omnipeek and I'm not impressed. It drops packets like crazy.

There is actually a not well known packet capture package by Microsoft (Dont shoot the messenger). It's called Netmon. The latest Netmon with the NDIS 5 drivers will fully decode all WiFi packets and has tons of filter options plus scripting abilities. Netmon is a very powerful package but is a bit on the steep side on learning. It's free tho which is nice. However, you can't get any better for us teslageeks than Airmagnet. AM beats them all hands down.
