Many enterprise level AP's will serve you well. Keep in mind that tracking the users and their website habits won't be done at the AP since it is a layer 2 device, but you can implement auditing software on servers just as you would in a wired environment.

As far as what cards will work with Windows and Linux, most will work with both.

A lot of your decision making will be with other factors such as cost, number of AP's (management capabilities) etc. If you want to give a bit more info we may be more help to you.
