Unfortunately Wireshark is a bit difficult to work with when trying to do any advanced analysis.

If your infrastructure was designed for 5 GHz VoIP, then I would give that a try. Hospitals are notorious for RF issues compared to the standard office environment.

What would be really nice is multi channel capture to check roaming and to check overall performance.

I'll be driving down to San Antonio next week if you want to chat about it in person. I just spent 2 hours in your fine town. I got a great view of it going 7 MPH on I-35 last Friday afternoon. :)
