I am going to be doing my first 'professional' site survey and I'm trying to figure out what signal strength I should be shooting for. We will be doing 802.11g and Wireless VoIP. I thought I had come across a table that had the signal strength and the data rate that it can support but I can't find it. Can anyone help?

I don't have a table to point you to, but generally speaking, aim for -65 dBm signal strength and 20-25 dB SNR. This will offer the best results for VoWiFi connectivity and data rates.

I found what I was looking for. On page 452 of the CWNA book from Sybex there is a table that shows what data rates can be expected at different signal strengths.
