I have worked with a few networks with VoIP phones, and not had any problems with them.

The main consideration I have noted is the amount of devices on the switch and that you have to think about the power draw.

That and using VLANS and QOS for the voice traffic...

However, PoE the physical layer, unless someone wants to correct me, works the same for all devices regardless of what they do, as long as they can correctly draw the power they are rated for.
